Job Scope
Work along with the Senior Manager of Culinary &
Innovation for curating culinary offerings for New Brands –
SKU’s Categories. Recipe creation, internal food trials,
consumer trials, C0G’s, SOP’s and scale-up models to be
in line with the present Biz Ops Model (Frozen & Cook
chill). Should be able to curate great dishes with simple
ingredients and have an out-of-the-box thought process to
provide great Brands consumers love. Should be able to supervise Stealth POD culinary team members and problem-solve on CX, quality, SOP’s, CK training, NS0 training. Proven track record of being part of Food Brand creation, development, Recipe accuracy, Scale-up, and consistency and has worked in frozen chain development of food SKU’s. Has exposure to Vendor end SKU. Has exposure to Vendor end SKU development?

Specialist in Shawarma, Mandi, Pilafs, Kebabs & Arabic Breads.

Experience :-

Minimum 2 to 3 years of experience as
a Sous Chef in reputed Cloud Kitchen Brands, Standalone
Restaurants, or Hotels in World Cuisine and exposure to Oriental Cuisine

Qualifications /Education

Ability to speak, write, read, and understand the primary language. (English & Local language)

Bachelor’s degree/Diploma in Hotel Management (Preference for Hotel Management or certification from culinary school)

Proficient in a variety of technology systems, especially Microsoft Office (Word, Excel, Outlook) and able to adapt to new systems quickly.

Key’s Responsibilities

Ability to curate SKU’s which are innovative, Scale up compliant, COG compliant.

Ability to plan ahead and come up with offerings with future lens.

Order materials, supplies, and ingredients based on demand.

Supervise kitchen employees and organize food orders – In R&D and Stealth POD’s

Oversee the food preparation and cooking process in Stealth Kitchens and CK

Recruit and train kitchen employees in designated stations in Stealth POD’s

Work with the Stealth Ops in charge for Brand launches and Pilot phase operations

Schedule work shifts for employees.

Store all food products in compliance with health and safety regulations.

Ensure the kitchen is clean and organized. Maintain weekly and monthly cost reports.

Ability to work with vendors to move fast and curate great CX products.

Maintains comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends, and makes appropriate adjustments to kitchen operations accordingly.

Controls and analyzes, on an ongoing basis, the level of the following:

Develops with the Training Manager training plans, develops training material in accordance with Bundle Technology PVT LTD guidelines, and implements training plans for the Food Production employees and other Food and Beverage employees.

work closely with L&D for Ops SOP’s

Work closely with QA for shelf-life validation, FSSAI-compliant practices, and Allergen declaration

Attends and participates in other meetings & Con Calls as required by the administrative calendar at MEET Google.

Develop SKUs at vendor end, Knowledge Transfer and Bulk Production matters

Keeps an up-dated Swiggy Brand Policies and Procedures file and up-dated files on the following Food Production matters:

Recipes

Finance

Standards

Personnel and Training

Outlets

Meetings

Projects

Material and Equipment

Miscellaneous

Demonstrate Awareness of FSSAI policies and procedures and ensure all procedures are conducted safely and within FSSAI guidelines.

Be aware of the duty of care and adhere to occupational, health and safety legislation, policies, and procedures.

Be familiar with property safety, first aid, and fire and emergency procedures and operate equipment safely and sensibly.

Initiate action to correct a hazardous situation and notify supervisors of potential danger.

Log security incidents and acidents in accordance with Bundle Technology PVT LTD requirements.
