Are you passionate about baking innovation? We’re looking for an experienced R&D Manager to lead our Cakes Segment within the Research & Development team. If you have a deep understanding of cake science, a flair for innovation, and experience in scaling recipes from lab to plant — we want to hear from you!


Role Purpose

To drive research, development, and innovation in bakery products with a strong focus on cakes. You’ll be responsible for creating new recipes, improving existing formulations, ensuring smooth scale-up, and maintaining top-notch quality and food safety standards.


Key Responsibilities

Product Development & Innovation

  • Develop innovative cake recipes, textures, and flavors in line with market trends.
  • Work with new ingredients, technologies, and baking methods.
  • Conduct trials to improve taste, shelf life, and cost efficiency.

R&D Manager (Bakery – Cakes Segment)

Process & Scale-Up

  • Convert lab-scale recipes to commercial production.
  • Partner with production teams for plant trials and ensure seamless scale-up.
  • Optimize baking, mixing, proofing, and packaging processes.

Quality & Compliance

  • Ensure all R&D complies with FSSAI and global food safety standards.
  • Validate sensory, texture, shelf stability, and microbial safety.
  • Maintain accurate R&D documentation.

Collaboration & Leadership

  • Work with cross-functional teams: Production, QA, Marketing, Procurement, and Sales.
  • Lead and mentor bakery chefs and R&D staff.
  • Collaborate with suppliers on new ingredients and tech.

Cost Management

  • Formulate cost-effective recipes without compromising quality.
  • Support sourcing of alternative raw materials for cost savings.

Market & Consumer Insight

  • Track market trends, consumer behavior, and competitor products.
  • Translate insights into differentiated, high-quality cakes.

Qualifications & Experience

Bachelor’s/Master’s in Food Technology, Bakery Science, or related field
8–12 years in Bakery R&D (specialized in cakes)
Proven success in launching bakery products
Strong knowledge of ingredients, formulations, and industrial baking equipment
